2023 ‘Dr John’ Cabernet Sauvignon Cabernet Franc

WINEMAKING NOTES

This wine commemorates John’s father Dr John Loughlin, an ophthalmologist, who developed and owned Waimarama Estate Winery. The wine is a blend of 83% Cabernet Sauvignon and 17% Cabernet Franc, reflecting the great wines from these varieties that Dr John made at Waimarama Estate. Each varietal was fermented individually followed by extended post maceration on skins to build richness. After pressing, the wines were settled and racked to fine French oak barriques. Here they completed malolactic fermentation and were matured for 12 months before blending.  Only the absolute best barrels were selected for this blend. The wine was then held in tank as a blend for a further 6 months, prior to bottling. The final blend has a 47% new oak component and 18% second fill.

TASTING NOTES

Dark and brooding, with toasted oak spice aromatics, notes of cardamom, cassis, dark liquorice, and chocolate. Broad and wonderfully concentrated, the palate is powerful and juicy. Toasty oak interplays with chocolatey tannins, supported by an abundance of dark berry fruits, spice and liquorice flavours, with a beautiful richness from start to finish.
