2021 ‘Dr John’ Cabernet Sauvignon Malbec Cabernet Franc

WINEMAKING NOTES

This wine commemorates John’s father Dr John Loughlin, an ophthalmologist, who developed and owned Waimarama Estate Winery. The wine is a blend of 67% Cabernet Sauvignon, 27% Malbec and 6% Cabernet Franc from the excellent 2021 vintage, reflecting the great wines from these varieties that Dr John made at Waimarama Estate. Each varietal was fermented individually followed by extended post maceration on skins to build richness. After pressing, the wines were settled and racked to oak barriques. Here they completed malolactic fermentation and were matured for 12 months before blending. The wine was then returned to neutral oak for a further 6 months. The final blend has a 25% new oak component and 25% second fill.

TASTING NOTES

The aromas are an ethereal combination of sweet perfumed florals and savoury spice, brooding dark fruits, plum, blackberry and cassis with notes of leather, liquorice and a hint of graphite. The palate is concentrated and flavourful with superfine tannins and a gently richness. This is a beautifully refined wine, with each element perfectly balanced.
